Memorial Day is almost here so I thought I’d share with you one of my favorite recipes – Cuban marinated chicken breast with orzo and green onions!
- White wine vinegar, one lemon, freshly squeezed, salt & pepper to taste, a little bit of ground cumin, onion powder, chopped garlic and chopped Italian parsley. Add a tiny pinch of sugar (or a few drops of honey) just to balance flavors
- For 4-6 boneless chicken breasts, use about 1/2 cup of vinegar, 1/4 t cumin, 1T onion powder, and rest of spices to taste. If you like it very citrusy, add zest of the lemon as well
- Marinate breasts at least one hour, 2-3 hours are even better. Grill about 3-5 minutes per side, depending on thickness.
- Cook orzo according to package directions – add chopped green onions and salt & pepper to taste…. ENJOY
