So this year, when goose was to be the holiday meal, I reached out to friends for help.  The best advice came from Jerry and Barbara.

I’ve cooked goose a few times, it’s not hard, but one has to start with a good recipe and monitor the thing. The usual question is “to prick or not to prick?” I’m talking about the skin, of course. If it’s yes, you use a sharp needle and prick the skin all over the bird before roasting, being careful not to put the needle into the meat. Then, as the goose cooks, one has to remove the rendered fat with a bulb baster as it builds up in the pan. This is necessary with or without pricking. Filter the liquid fat through cheese cloth and you’ll have the world’s best cooking fat. Overcooking goose is worse than undercooking because the meat gets stringy. Tomorrow I’ll dig up a couple of recipes just for time and temp. Let me know if you’re stuffing the bird. i don’t know how big your party is, but pound for pound goose yields far less meat than other poultry. I’m getting hungry. 

Two strategies: hot start or consistent temp. If you go for consistent heat, it’s 325 degrees, 16 minutes per pound. No pricking, no basting. Or you can start hotter, say 425 for a half hour and then lower the temp to 325 or 350. Probably should prick the skin if using the latter method. Baste every half hour. Cooking time will be shorter for the hot start method, about 2 &1/4 hours for a ten pound goose. Bird is done when a leg moves easily in its socket and juice from the thigh runs clear. If you use an instant read thermometer the thickest part of the thigh should be at 175 degrees or so. Again, the worst thing you can do is overcook it, so be sure to start checking for doneness early. Also let it rest under foil for fifteen minutes or so before carving.

One more, you can also make use of those small pieces of pine chips for filling all your rooms with a potpourri like fresh aroma.

Fettucine with Bacon, Arugula, and Blue Stilton Sauce

You will need the following Ingredients:

1 lb. good quality smoked bacon

2 cloves garlic, minced

1 shallot or one-half of a small onion, diced

One-half cup dry white wine

1 and one-quarter cups unsalted, canned chicken stock

One-quarter teaspoon dried thyme

1 bay leaf

1 lb. fettucine

9 ounces Stilton cheese, divided

One-quarter cup heavy cream

2 tablespoons Dijon mustard

10 cups loosely packed arugula (or spinach leaves)

Black pepper to taste

One-half cup pine nuts, toasted

Directions for Cooking:

1. To cook the pasta, bring a covered 10-12 quart pot of salted water to boil.

2. While waiting for your pasta to cook, you can start cooking the bacon. Use a paper towel to take away the oil. Break cooled bacon into bite-size pieces. Reserve 2 tablespoons of bacon drippings in the pan.

3. In these drippings, sauté garlic and shallot over medium heat for 2 minutes, or until they become soft and begin to brown.

4. After adding the white wine, cook for six more minutes. Add stock, thyme, bay leaf. Bring to a boil, then simmer for 5 minutes. At this same time, add fettucine to the pot of boiling water, stirring often, cooking it according to manufacturer’s directions, and this should be about 11-12 minutes.

5. To maximize the time, while pasta is cooking, place 8 ounces of Stilton, heavy cream, and Dijon mustard in a blender or food processor and purée until smooth. Whisk this into the wine-stock sauce, reducing heat to low. Simmer until the fettucine is ready to be drained.

6. Drain pasta well. Cover the pasta with the pan lid.

7. Meanwhile, add the arugula, pieces of bacon, black pepper, and pine nuts to the sauce, tossing frequently for 30-60 seconds. Arugula will wilt and bacon and nuts will become heated.

8. Try to taste the sauce before adding any salt, as the bacon and cheese usually add enough.

9. Pour the sauce over the fettucine, tossing well in a large bowl. Sprinkle with the remaining ounce of crumbled Stilton.

December and the holidays often bring a combination of great joy for some and sadness for others.  Friends, colleagues and clients alike may be feeling anxiety or stress, loneliness or longing for family members far away or remembering years past, some good and some disappointing.  This holiday season, don’t assume everyone loves the season, instead, ask:  “What does December mean to you?” and see what they say.

Whatever the Holidays represent for you, here are some great ways to help soothe the Holiday blues.

Take inventory:  How do I feel about December this year?  The Holidays? 

Don’t assume it is the same feeling from year to year.  Maybe you have changed, grown, and healed.  Be open, compassionate and curious as you ask this question of yourself, then ask your friend, client or a co-worker.

Ask the question:  What is important for me during this holiday season?

Is it important to keep stress down so you make it through in a healthy way?

Is it an opportunity to make amends with that sister or brother or friend you’ve been fighting with?

Is it important to be present and acknowledge that this holiday year is painful?

If you are away from a loved one or grieving the loss of a loved one, consider this:

One dinner, whether it is a Christmas, New Years, or any Saturday night, ask your guests to bring pictures or a story of the loved one that isn’t with you.  Share the pictures and stories and honor and celebrate them and the meaning they have in your life.  Laugh and cry, together.

1. Exercise.  Most Americans tend to over eat during December and the Holidays.  Exercise at least 3 days a week, get your heart rate up for 30 minutes each time and notice a natural effect on your mood.
2. Share your feelings with someone or a journal.  Clients and staff a like need to share about the multitude of feelings that can cause Holiday Blues.  Our feelings are complex, getting them out, sharing them with friends, co workers and loved ones reminds us we are not alone.
3. Relieve yourself of the pressure to spend money and give meaningful presents.  One of the most meaningful gifts I ever received was from my brother.  It was a picture of us when we were little.  If you have kids, give pictures of your kids or animals out as presents….the family will love it.  It’s the only way I keep up with what my family looks like back east!
4. Finally, take it easy on yourself.  Show yourself some love and acknowledgment for all that you do.  Honor yourself this year, as you honor and give to your friends, family, colleagues and clients.  When you give to others, don’t forget to keep your own tank filled as well.

Other types of meats such as baked hams or hens are good to fix ahead, and refrigerated and kept juicy with a brown or light colored chicken broth.

There are so many options to create your perfect and stress free holiday meal celebration, just remember to start early and delegate what you feel that you might not be able to handle. A good idea is to begin testing a few of your holiday creations if you feel you must fix them. That way you will never feel that your dinner is not what you want it to be, and you can set back and smile knowing you did your very best.

The origins of the Christmas tree, like many other Christmas traditions originated in Germany.  In the 7th century a monk from Devonshire traveled to Germany to preach the word of God.  He spent time in Thuringia, an area of Germany which became the center of the Christmas Decoration industry.  Legend says he used the triangular shape of the fir tree to describe the Trinity of God the Father, Son and Holy Spirit.  People began revering the fir tree instead of the traditional oak.  The original Christmas trees were hung, upside down from ceilings as a symbol of Christianity.

In Latvia, the first decorated tree appeared in 1510.  Martin Luther is said to have come home and seeing the stars shining brightly through the fir trees and lighted the dark night, decided to add candles to his tree.

Christmas trees have been decorated with many items.  Food items were the symbol of plenty and paper flowers were symbolic of the tree in the Garden of Eden.  Red flowers symbolized knowledge and white ones for innocence.

Another staple of the decorated Christmas tree is tinsel.  It too originated in Germany around 1610.  An interesting fact is that the original tinsel was actually made with pulled silver.  It was durable, but did tarnish quickly.  Silver was used for tinsel up to the mid 20th century.

Georgian Kings brought the first Christmas trees to England.  Since the English didn’t like the German Monarchy, they didn’t copy their court by putting up Christmas Trees.

A few families did have Christmas trees as a result of the influence of their German neighbors.  The Christmas tree didn’t grow into popularity among the English until the reign of Queen Victoria and Prince Albert.  The German born Prince had the family standing around the Christmas tree and it was illustrated in the London News.  Since Queen Victoria was very popular the tradition began to be copied and quickly spread from England to the shores of The East Coast in American society.  The first trees were decorated with silver tinsel, silver wire ornaments, small beads and candles.  The decorations were home-made and young women spent hours working on Christmas crafts.  They sewed little pouches for secret gifts, made paper baskets in which sugared almonds were placed and made beautiful angels to sit on top of the tree.

Glass ornaments appeared around 1870.  They were imported from Thuringia to England and became a status symbol.  The more glass ornaments on the tree, the better the social status.  Flags also became popular to decorate the tree as the British Empire grew.  Flags of allied countries as well as the Empire were hung on the patriotic trees.

In the 1800’s many innovations came along to change the Christmas tree forever.  The introduction of electric lights, in 1882 and metal hooks for hanging decorations on the tree safely are just a couple.

Trees sat on tables until the late 1800’s.  Each family member had a tree on the table and his or her gifts were placed around their own tree.  They began to stand on the floor and came in larger varieties and sizes.  Soon manufactured trees began appearing.  The tree wavered in popularity due to times of mourning for Queen Victoria, wars, and hard times.

Large trees were decorated and erected in public places to help the morale of the people during the hard times.

Real Christmas trees are still very popular, and what fun it is to go and tag your tree early in the fall and have it ready to be picked up on your specified date.  It can be a family tradition with each member looking for the “perfect” tree.  In this modern time, the manufactured trees have gained in popularity.  These perfectly shaped trees can be put up and taken down without a single needle dropping into the carpet.  They are so natural looking that many times it fools everyone.  You can even buy pine sprays to put on your tree to make it smell real.
